The 13th loaf was to protect the baker from being accused of selling less than they said (i.e a light loaf). in ancient Egypt if a baker was found to be cheating someone they would have their ear nailed to the door of their bakery and in bablyon if a baker was found to have sold a light loaf they would have their hand chopped off hence if someone ordered 12 loaves the baker would deliver 13
