If you go to the "My Account" tab and then click on "Personal Details" and delete the town/city line that should do it.

Hi, if you're talking about your forum profile (in 'My Profile') then just leave it blank. If you're talking about your table profile (pops up when other players on the table hover over your name) then just change it to something else in 'My Account', but remember to set it correct when you need to withdraw or deposit.
