As for the the odds of all three holding up ...................... almost impossible!
If you take each hand in isolation then the odds are exactly the same each hand (16/1 for any PP, ~8/1 hitting the set). The reason for this is previous events have no impact on probability or odds.
If you're asking "what's the probability of the being dealt pocket pairs in each of the next three hands" then you'd need to multiply the probs together, as you're talking about a specific sequence of future events.
