It will be either 94 off suit or 73 off suit - standard winner against AK  AQ  AJ - certain to hit 2 pair - simples

It takes experience more than anything.  As you play you get better and better comparing the texture of the community cards up against the betting patterns of those that you play.  This will give you a range of hands those you are playing could have, so you compare that against your holding and see where on the graph you are.  It gets more complicated as you play with certain people longer and you play more and more people who either can play against type or are very good at reading you and try to adjust their play according.

The short answer, experience and learning (training sites and forums are invaluable for this).
