what happens in live poker tourneys?

I noticed that the Glasgow leg of the Sky poker tour is being held in the Alea so I popped in last night to have a look at the place as its a pretty new build.
There was what i presume is a standard multi table tournament on with 20 minute blinds, and players dealing. I was wondering what the typical protocol was for choosing the dealer at each table. The guy i noticed dealing had all the fancy tricks and shuffled in about 3.47 seconds. It ocurred to me that if it was me dealing, we'd be lucky to get 3 hands in the 20 minute level and more than likely each player would keep getting the same hole cards, leading to me being thrown into the river clyde by a disgruntled gentleman with 7-2 off for the 5th hand in a row
I figured players would take turns to be the dealer but at this table the same person seemed to keep the job.

Either this or its passed round with the button every hand, depends where you play. It's not uncommon to have an MTT where 2-3 tables have a player who deals every hand and the others are passed around.
Just dont fall into the trap some old-timers will try every night, the "You're in seat 1, you HAVE to deal every hand". It's bull.
the table dealer is assigned by the seat you are draw at the start of the tourney, if you are drawn seat one, its the dealers chair.
i didn't know this until last Saturday when i played live for the first time, i was drawn seat one and didn't have a clue what to do, luckily a nice lady at my table took pity on me and swapped seats with me.so if you play in one and are drawn as dealer, just ask if someone else minds dealing if you are uncomfortable with it, from what i saw, some people enjoyed being the dealer.
if the buy-in is £30 or over i think you get a dealer provided in most casinos i should think.
this was a £40 buy in, had about 90 runners, but dealers werent provided.

in cash games every player pays £5 hour for the dealer. its well worth it
£50/hour. thats quite an hourly rate if its a 10 seater cash table. Think i will practise my shuffling after all!

But.......
At ALL SPT Events, House Dealers will be provided for the Main Event.
Sometimes, we self-deal the SNG's, but only because we prefer it that way, as we wanna mess about a bit.
