Although we all see 7 cards in Texas hold 'em, our hand is only the best five cards from those seven. The hand rankings are:

    High card
    One Pair
    Two Pair
    Three of a kind
    Straight
    Flush
    Full House
    Four of a kind
    Straight flush

If we have QT of hearts and the board comes: 9h, Jh, 8d, 3h, 5c
Our hand is the best five cards from those seven. So although we can make the straight from the eight to the Queen, we can also make the flush, which is a better hand. This means our hand doesn't actually include the 5c or the 8d and only contains the five flushing cards.
We never play more than five cards and our five card hand is: Qh, Jh, Th, 9h, 3h.

So the Queen-high flush only wins against the Ace-high flush if the cards that make the straight are all of the same suit. So: 8h, 9h, Th, Jh, Qh. That would be a straight flush.
